Apollo Bagels is a fast‐growing bagel company based in NYC. As we scale our stores and

commissary, supply chain and procurement are becoming some of the most critical levers in the

business. We’re looking for a hands‐on Supply Chain & Procurement Manager to own

purchasing, inventory systems, and vendor relationships as we grow.

This is a builder role. You’ll be close to the day‐to‐day, work directly with operations and finance,

and help put real systems in place that allow us to scale without losing control.

What You’ll Do

● Own purchasing and procurement across food, beverage, packaging, and select

smallwares

● Manage vendor relationships including distributors, manufacturers, and secondary

suppliers

● Negotiate pricing, contracts, credits, and cost‐plus structures

● Be the day‐to‐day owner of Restaurant365 inventory and purchasing workflows

● Ensure clean item setup, units of measure, recipes, yields, and pricing in R365

● Drive accurate inventory counts, variance tracking, and waste reduction across stores

and commissary

● Forecast usage based on sales trends, seasonality, and new store openings

● Support new store openings with pars, ordering plans, and vendor setup

● Partner closely with operations, commissary leadership, and finance on real problems

● Surface risks early — supply disruptions, pricing changes, vendor issues

What We’re Looking For

● 4–8+ years experience in supply chain, procurement, or inventory roles within

restaurants, food production, or hospitality

● Hands‐on experience with Restaurant365 (R365) — inventory and purchasing

experience required

● Strong understanding of food distribution, cost‐plus models, and vendor negotiations

● Highly organized and detail‐oriented, with a practical, problem‐solving mindset

● Comfortable working in a fast‐moving, founder‐led environment

● Willing to be in the weeds and build systems at the same time

Nice to Have

● Experience supporting commissary or centralized production operations

● Background in multi‐unit restaurant growth

● Experience working closely with finance or cost accounting

Compensation

● Base salary: $115,000 – $135,000, depending on experience

● Bonus: performance‐based incentives tied to cost control, inventory accuracy, and

growth
